Potato Soup

 

5 cups sliced, raw potatoes

2 medium onions, sliced

2 tsp. salt

3 tablespoons butter or margarine

2 2/3 cups milk (approximately)

1 tablespoon finely chopped parsley (optional)

 

Put potatoes and onions into a 3 quart saucepan and barely cover with cold water. Add salt. Cover tightly and heat to boiling. Reduce heat and simmer for 10 minutes or until potatoes are perfectly tender. Mash potatoes in their liquid.

Add butter and enough milk to give desired thickness.

Reheat to scalding. Remove from heat. Garnish each serving with a sprinkle of parsley.
