Shortbread Cookies
2 ¼ cups flour 1/3 cup sugar 1 cup butter (not margarine)
Preheat oven to 325 degrees. Combine flour and sugar. Cut in butter until fine crumbs appear and starts to cling. Form into ball and knead until smooth. Divide dough in half. On ungreased cookie sheet, pat each half into a 6-inch square. Cut each square into 9 squares. Then cut diagonally in one direction, corner to corner, through each square to form 18 triangles. Prick with a fork. Bake at 325 degrees for 15 minutes. Take out and sprinkle with sugar. Put back in for 10 minutes. Cut into triangles again while still hot. Keep on cookie sheet 5 minutes. Cool on wire rack. Makes 36.
