Cake Doughnuts
Ingredients:
½ cup sugar
2 tablespoons melted butter
1 egg
½ cup milk
1 ½ teaspoons vanilla
2 cups flour
1 teaspoon salt
1 tablespoon baking powder
½ teaspoon cinnamon
¼ teaspoon nutmeg
48 ounce bottle of vegetable oil
Powdered sugar for topping
Directions:
- In a mixer, blend sugar and butter.
- Add the egg and mix some more.
- Add milk and vanilla and mix for about 2 minutes.
- Sift the dry ingredients (except for powdered sugar).
- Add the dry ingredients to the mixer bowl and combine.
- Cover the dough and chill it in the fridge for an hour.
- On a floured surface, roll the dough about ½-inch thick.
- Cut dough with a doughnut cutter dipped in flour or use the rim of a glass.
- Find a smaller round cutter to cut a hole in the middle of each doughnut.
- Place the oil in a deep fryer pan.
- Heat oil to about 350 degrees. Use a thermometer—do not guess.
- Carefully drop two or three doughnuts into the hot oil. Avoid splashing oil.
- Fry doughnuts for one to two minutes on the first side.
- Flip doughnuts and fry another minute on the other side.
- Remove doughnuts with a fork or a slotted spoon.
- Place on a wire rack covered with paper towels to drain.
- After doughnuts have cooled, cover them in powdered sugar or a glaze made from powdered sugar and water. Add sprinkles if you like.
